Cancer belongs to the most serious health and economic problem in developed countries. Carcinogenesis consists on accumulation of violation in genes for certain proteins taking parts in regulation of cell cycle, proliferation and differentiation of cellsand communication among cells. Combination of many factors with proliferating, antiproliferating, mutagenic, carcinogenic, and anticarcinogenic effect usually takes place in this process. From known carcinogenic factors mainly life style, particularly dietary customs and smoking, take part at tumour incidence. Quality and quantity of food influence carcinogenic process. Foodstuff can contain carcinogenic compounds and also compounds with anticarcinogenic effects. Resulting effect on organism depends onprevailing effect of both groups of compounds.
