Quality assessment of fruit juices by NIR spetroscopy
Popis výsledku v původním jazyce
Possibilities of detection of substances used for adulteration of fruit juices were investigated in juice products distributed within the framework of retail stores network. This detection was performed by the method of near-infrared spectroscopy (NIR).Analysed were samples of orange, apple, and grapefruit juices. At first it was assessed if their quality parameters (soluble dry matter, total acids, formol number, malic acid, citric acid, ascorbic acid, lactic acid, specific density and ethanol content) did correspond with the limit values specified by the Association of the Industries of Juices and Nectars. Altogether 45 various fruit juices were analysed and it was found out that in 10 cases at least one parameter was out of the approved limits. Thereafter, juice samples were mixed with different amounts of water and sugar and, besides, they were also mixed together. The objective of this mixing was to find out if it is possible to detect, by the NIR spectroscopy, those juices that
