Food wheat was studied for the influence of methods and length of storage, varieties and harvest year in the storing facility with the system of active ventilation and without it. The experiment lasted 742 days for the harvest year 1997 and 530 days forthe harvest year 1998. Varieties used for the experiment were Asta, Brea, Bruta, Hana and Samara. The studied varieties were subjected to sampling in regular intervals and examined for some qualitative parameters such as protein and gluten contents and gluten index. Protein content values were highly significantly affected by wheat variety with the variety Hana conclusively distinguished with its higher content (average value 13.9%) from all other varieties. Average values of other varieties were 11.3%(Asta), 12.5% (Brea), 11.2% (Bruta), and 12.7% (Samara).
