The aim of study was evaluation the oxidation status of duck skin from organic and conventional rearing system during chilling storage under air and vacuum atmospheres. Duck skin of thigh and breast was analysed at 1st, 3rd, 6th and 9th day of chilling storage. Thiobarbituric acid reactive substances content (TBARS) and free fatty acids (FFA) were detected. TBARS and FFA in most of organic samples were higher than conventional samples regardless to atmospheric type of storage at all sampling days. TBARS values of organic samples under air chilling storage increased gradually during storage period and significantly (P < 0.05) at 9th day for skin of thigh and at 6th day for skin of breast. This study found that the duck skin from organic system was more susceptible to secondary oxidation (particularly that storage in air atmosphere) during refrigerated storage.
