In order to minimize the risk associated with mycotoxins and to eliminate their impact on Czech public health, continuous monitoring of the presence of toxinogenic moulds, mycotoxins and their biomarkers is necessary, in conjunction with strict respect of EU legislation. The attention of public health authorities and state surveillance agencies in the Czech Republic has focused on systematic control of the presence of mycotoxins in foodstuffs. Food safety strategy was and is one of the priorities of theCzech government because the Czech Republic is a member of the European Union. Currently, the content of mycotoxins in foodstuffs in the Czech Republic is regulated by the existing legislation of the European Union.Among mycotoxins-ochratoxins, ochratoxin A (OTA) occupies a dominant place (from point views of amounts and toxicity) and represents significant risk for human and animal health which also implies economic losses around the world (by the contamination of the foodstuffs).
