BEER POLYPHENOLS - CONTRIBUTION TO HUMAN HEALTH
Popis výsledku v původním jazyce
Beer is a low-alcoholic beverage that is brewed from barley (malt) and hop, which may be involved in the prevention of cancer and cardiovascular diseases. Beer contributes positively to health effects due to its phenolic components. The majority of phenolic constituents of beer are derived from malt (70-80 %), whereas about 20-30 % are derived from hops. Structural classes include simple phenols, benzoic- and cinnamic acid derivatives, coumarins, catechins, di-, tri- and oligomeric proanthocyanidins, (prenylated) chalcones and various flavonoids. Overall it has been become clear that beer compounds belonging to different structural classes have distinct profiles of biological activity in these in vitro test systems. Xanthohumol and other prenylflavonoids from hops have received much attention in recent years as cancer chemopreventive agents in in vitro studies. In addition to these cancer-associated studies, moderate consumption of beer has been associated with a reduced risk of corona
