Fattening performance, carcass composition and meat quality were investigated in 44 crosses sired by Gascon (GS) and Charolais bulls. The animals were allocated to three groups. Indoor bulls (IB) and Indoor steers (IS) were finished indoor on a diet consisting of maize and grass silage, straw and concentrates and slaughtered at 530 and 500 kg respectively. Extensive steers (ES) were after 78 days of winter housing on a low energy diet turned out to pasture for 181 days. It was followed by a finishing penishing period (70 days) during which the animals were offered a high energy diet. The IB bulls gained more than the IS and ES steers. Internal fat production, fatness score, separable fat proportion, fat thickness and lipid content in lean muscle were higher for the IS group. Total meat proportion was higher for the IB group. Breed differences were displayed particularly in lower daily gains, higher production of internal fat and less favourable fatness score of the GS crosses.
