The utilization of naked oat and naked barley is a part of research project ?QF3291 Food and food supplements development on the base of cereals? supported by the National Agency for Agricultural Research. The attention was paid to breeding, cultivation,agricultural properties, malting and utilization in functional foods. Naked oat and naked barley provide one of the richest sources of dietary soluble fibre beta-glucans among cereals. Beta-glucans are prebiotics, have cholesterol-lowering effect and reduce cardiovascular disease risk. The flakes and flours were prepared from used or malted cereals and these raw materials were applied into various foods. The technologies used in dairy industry were employed to form dairy-like products with elevated health benefit. The fermentation by various starter cultures was tested, too. The flours were combined with both vegetable-based components and milk and other dairy components. Dairy-like products focused on the patients with lactose intoler
