Characterizing a Czech?Type Beer
Popis výsledku v původním jazyce
The goal of project was to characterize the co?called Czech?type beer and determining the technological factors that have the greatest influence on this type of beer. The aim was to describe the main Czech brands of beer using the most advanced analytical, sensory and statistical methods. We also searched for difference between Czech beers as a whole and foreign beers (lager or Pils type). Selected Czech and foreign beers were put through a complex analysis and sensory assessment. The analytical-statistical model, which helps in a thorough characterization of similarities and differences between various beers, was improved and extended. The results were processed using mathematical?statistical methods (dispersion analysis, factor analysis, cluster analysis, classification trees, etc.). Later the project aimed at evaluating some technological parameters - the influence of malt, the brewing process and fermentation methods - which mostly contribute to the character of both groups of beer
