Qualitative characteristics of ten different varieties of apples from organic (BIO) and integrated production (IP) systems were compared. The weight of the fruit, total solids, refractive index, saccharose, glucose, fructose and ascorbic acid content were analysed. Sensory evaluation of apples was carried out by profiling method and paired comparison test. The profile of volatile aroma substances was compared by gas chromatography. There was a statistically significant effect of variety (p = 0,0004) on the content of ascorbic acid, as well as the difference in the contents of mono-and disaccharides between values from BIO and IP. Total solids and refractive index results showed a significant difference between the values from BIO and IP. There was also a difference (p = 0,0002) between the weight of BIO and IP apples.
