On September 13-15, 2023, the 9th international conference Chemical Reactions in Foods IX (CRF 2023) took place in Prague, after a break caused by the covid-19 pandemic, with the subtitle "Chemistry & nutrition science beyond smart food designing". This event is traditionally organized in Prague by the University of Chemistry and Technology in Prague and its Department of Food and Nutrition Analysis, in collaboration with the University of Piemonte Orientale (UPO), Novara, Italy and Wageningen University & Research (WUR), The Netherlands, and under the auspices of the Food Chemistry Division, EuCheMS. CRF 2023 followed on from previous years and again focused on research topics that relate to the latest scientific knowledge on the reactions of food components during processing and storage, and their influence on the quality and safety of products and health of consumers, such as: (i) raw materials for food production, (ii) processing & storage, (iii) strategies to improve quality, safety and shelf life increase, (iv) food additives and other added ingredients, (v) mitigation of food contaminants and residues, (vi) novel foods, botanicals and food supplements, (vii) future & up-cycled food.
