In this work we use Electrical Impedance Spectroscopy as a relatively new method which can be apply to food quality assessment. The aim of the presented study is to determine passive electric properties of industrially produced orange juices concentratein comparison with fresh squeezed orange juices, and find out the equivalent circuit of these juices in the arrangement of flat electrodes. Modified algorithm based on artificial ant colonies has been used to find the value of equivalent circuits elements. We have adopted the constant phase element approximation to model the electrical response of the orange juice as an equivalent electrical circuit. Founded equivalent circuits show the marked difference between 100% commercially produced juices and thefreshly squeezed juices. The impedance of equivalent circuit calculated by ACA algorithm is in good agreement with experimental result in the whole frequency range.
