Speciation analysis plays an important role in analysis of food and food supplements. Food is the most obvious mean of transport for toxic elements to enter the human body. The identification and determination of the element species is necessary for an accurate risk assessment. While the toxic inorganic arsenic (AsIII and AsV) have been proven as carcinogenic compounds, methylated forms of arsenic such as methylarsenic acid (MMA) and dimethylarsenic acid (DMA) are significantly less toxic. Finally, other well-known species such arsenobetaine (AsB), arsenocholine (AsC) and arsenosugars (AsSs) are considered to be non-toxic. This review focuses on basic principles of HPLC and advantages and limitations of using ICP-MS as a detector for arsenic speciation. Important aspects of analytical procedures used in analysis of food and food supplements including column, extraction method, mobile phases and separation conditions and validation parameters are also presented.
