The effects of different controlled atmospheres on the storage of fruit of two plum cultivars, 'President' and 'Stanley' (Prunus domestica L.), were studied. Fruit were kept for 33 days at 3.0 - 3.3°C under ultra-low oxygen storage (0.9% O2 and 0.5 CO2),a controlled atmosphere (2.0% O2 and 6.6-7.0 % CO2), anaerobic conditions (0.2% O2 and 1.0 % CO2) and in a regular (normal) atmosphere (21 % O2 and 0.03 % CO2). Subsequently they were stored for 42 days at 3.0 - 3.3°C. In healthy fruit, there is a low level of anaerobic respiration, manifested by the production of ethanol and acetaldehyde. Using gas chromatography, the detected levels were greater for 'Stanley' than for 'President'. The cultivar 'President' always had a lower ethanol level in comparison to 'Stanley' these levels ranged from 697 mg.1-1 to 855 mg.1-1 after 21 days in anaerobic conditions.
