The aim of this study was to follow changes in the content of sugars and acids and in indexes of ripeness of grapes within two years that differed markedly in climatic conditions. Experiments involved grapes of white cultivars Rhein Riesling and Müller -Thurgau. Grapes were sampled in regular weekly intervals in the vineyard in Lednice in summer months of years 2000 and 2001. Samples were analysed to estimate pH, concentration of titrable acids, soluble dry matter, reducing sugars and concentrations ofmalic and tartaric acids. Of meteorological parameters, the sum of temperatures and total sum of precipitation were recorded. The highest differences between both years under study were recorded in the content of organic acids in the variety Rhein Riesling. In 2001, bad climatic conditions resulted in low sugar content in grape juice. In 2000, high indexes of ripeness were recorded in grapes of both varieties and this was a good precondition for production of top quality wines.
